For me, it was more of a moral issue than a health issue which makes it so much easier to make the choices that I do. I've been vegetarian for about 4-1/2 years and have been vegan since April-- though I will say, I don't make myself crazy with it. If I'm out and order a salad that has parmesan on it, I'm not going to send it back. But 99% of my daily food choices are definitely meat and dairy free. I saw several documentaries this past year and have read several books that, besides for the moral reasons, also made me truly believe that being healthy is as easy as changing what we eat. Heart disease is prominent on my dad's side of the family. He had bypass when he was 45. I am 47 now and am doing my best to make sure I stay healthy for a very long time. :) It really is so very easy once you change your thoughts on food and where it comes from. Think of food as fuel for your body, the vessel that God created. I saw the documentary "Forks Over...Good luck! I saw the documentary "Forks Over Knives" earlier this year and it really changed my life! I've been concentrating on a plant based diet although I have had a couple of "off the track times" if you know what I mean. I can always tell when I get off track!
