One

A friend of mine was in visiting from the west and we met for coffee and dessert the night before last.  Oh my gosh!!!  She is a few years younger then me and looks many years younger.  She has been following a plant based food diet (vegan) for over a year now and medications are gone, cholesterol is good and as she said she "feels light as a feather" and let me tell you, she looks light as a feather.  Her husband's blood pressure, which was very high, is at a great level and without meds.

I guess you know where I am going with this, and maybe foolishly before the holidays, but feeling good and the possibility of reducing the number of medications has once again invited me to do more then take a look but to make the good old college try for me and my husband.  He not being a fan of brown rice (whole grains are very important) got me to dig out a recipe I found a while back for a perfect cooked rice.  Guess what, he liked it!  Usually I found brown rice either undercooked or mushy.  This is a keeper recipe and so very easy.

Rinse 1 cup of brown rice in cold water for 30 seconds.
Bring 8 cup of water to a boil.
Add rice and cook 30 minutes.
Drain rice, return to hot pot, cover and let sit 20 minutes.
Perfecto!  Can't get any easier then that.

There was this wonderful recipe of beans and brown rice but I didn't have all the ingredients so I just added
black beans, corn, salsa, onions, chilli powder ... broth would have been nice but I didn't have vegetable broth ... its now on my grocery list.  Its quite tasty and I'm sure will be even more when I have all the right ingredients.  This is my supper tonight.

The book I'm reading is calling for a 28 day challenge and I know that I will have to make an exception for Christmas but here's to day one.  Stay tuned and wish me luck!

  1. Oh sister, I do wish you good luck. I've long had an interest in doing this, and sometimes will for myself as change for the family is sometimes no welcome. They will eat it but not whole heartedly if you know what I mean. Oh I do wish we were closer...I like whole grain,rices dishes. I'm envious of your friend...she got to spend time with you having a cuppa and desert?

  2. I do wish you luck!!!! I know that eating as much of a plant based, and/or whole foods diet, is tremendously more healthy for us. I applaud you for taking the plunge in December, no less!!! Good luck!! I will try the rice your way! Love brown rice!!

  4. Good luck! I saw the documentary "Forks Over Knives" earlier this year and it really changed my life! I've been concentrating on a plant based diet although I have had a couple of "off the track times" if you know what I mean. I can always tell when I get off track! Do watch the film....you can find it on line, although I bought a copy from Amazon...also the book to go with it!

  5. Hi Glor, I'm glad to hear that you've been inspired to make this lifestyle change. For me, it was more of a moral issue than a health issue which makes it so much easier to make the choices that I do. I've been vegetarian for about 4-1/2 years and have been vegan since April-- though I will say, I don't make myself crazy with it. If I'm out and order a salad that has parmesan on it, I'm not going to send it back. But 99% of my daily food choices are definitely meat and dairy free. I saw several documentaries this past year and have read several books that, besides for the moral reasons, also made me truly believe that being healthy is as easy as changing what we eat. Heart disease is prominent on my dad's side of the family. He had bypass when he was 45. I am 47 now and am doing my best to make sure I stay healthy for a very long time. :) It really is so very easy once you change your thoughts on food and where it comes from. Think of food as fuel for your body, the vessel that God created. Wishing you all the best, Tammy
