Monday Menu

The weather has certainly cooled the past two days so looking forward to turning on the oven and trying a new recipe. Tonight's meal:

Oven Fried Chicken III (recipe from All Recipes)
Corn on the Cobb
Green salad of endive, green leaf and romaine,
cucumbers, tomatoes and mushrooms, with
sliced red onion
Sliced Fresh Peaches with Strawberries

Oven Fried Chicken III

1 (2-3 lb) whole chicken cut into pieces
(I'm using two chicken leg quarters as we're cutting down!
I also removed the skin.)
1 cup dried bread crumbs
1 tsp garlic powder
1 tsp salt (I will leave out)
1 tsp ground black peppers
1 tsp dried thyme
1/2 tsp paprika
1 cup mayonnaise

... Mayo, I'm not a big fan of mayo but the reviews
were great and I just have to try this.

1. Preheat over to 350 degrees.

2. Mix together all the dry ingredients in a medium bowl or gallon size reseable bag.

3. Coat the chicken with mayonnaise. Put in bag with the dry ingredients and coat/shake until well coated. Place chicken in a lightly greased 9 x 13 baking dish.

4. Bake for 45 minutes or until juices run clear.
