Hot Day, Cool Salad








My mother gave me this recipe many years ago. Its supereasy and it is always a refreshing salad during summer.

I don't really know the name of it, we always called it




Health Salad
1/2 green cabbage - chopped
1/2 red cabbage - chopped
Green pepper - diced
Onion - diced
Grated Carrots
*
Dressing:
1/4 cup water
1/2 cup + 1 Tbsp White Vinegar
1/3 cup oil
6 tsp sugar - I do not use the sugar
but some people like it in -
your choice
salt and pepper to tast
*
Mix, chill well and dig in.
Its a wonderful crunchy cool me down treat,
great for picnics and barbeques or
just for a snack by itself.

  4. Sounds healthy - I love cabbage and love to slice it paper thin for a raw cabbage salad like this.

  5. That sounds good. I eat a head of cabbage a week in salads. Here's my recipe - all vegetables should be log shreds or julienned.
    1/2 head cabbage, 3-5 carrots, sweet onion as much or as little as you like. Finely minced fresh garlic and ginger, red pepper flakes - all these proprotions per your personal taste.
    dressing: 2 TBS each, cider or rice vinegar, brown sugar, soy sauce, sesame oil. Toss all ingredients together, refrigerate several hours or overnight. Tossing occasionally to redistribute juices. Serve over hot or cold rice. Especially nice with white or brown fragrant rices, especially if you make it with lots of ginger,garlic and pepper. Also good stuffed in a pita bread with leftover chicken or pork. It's nutritious and versatile.
