Starting the week with a super easy, yet tasty dinner is needed for Monday. So here goes ...
Pasta & Vegetables
Romaine Salad
Fruit
Chocolate Pudding
1 pound of penne pasta
1 pkg 16 oz. frozen Italian Vegetables
1 can chic peas
1 large onion, diced
2 cloves garlic, minced
olive oil
1 cup chicken broth
pecorino romano cheese
Saute onion and garlic in olive oil
Add vegetables and chic peas, cook till vegetables have thawed
Add chicken broth, simmer for about 10 or 15 minutes or at least
while pasta is cooking.
Spoon vegetable mixture over pasta, sprinkle cheese, salt and pepper to taste and
enjoy.
This is so very simple, quick and tasty. A good way to start the week.

ReplyDeleteSounds great and I use chick peas in a lot of the soups I make and have even popped them in my chili when I was short of kidney beans. Thanks for sharing.
ReplyDeleteWho doesn't love pasta of any kind....this looks good..I like the chick peas too...easy peasy is right...and chocolate puggin..? the bestest....I've got some bread up, and have the beef for the beef stew in sloooooow cooker...desert? hmmmm....I'll check the pantry...Happy monday....

ReplyDeleteNow that sounds like my kinda meal -- no meat. I can use vege broth instead. I'm posting today about my favorite little stir fry. I just finished lunch at 4:30 pm. Ugh! One of those busy days where something quick but healthy is needed.
